tofu tacos
I invented something! Or rather, I re-purposed something with delicious results. A while back, Kate taught us to coat tofu with cornstarch to make perfect, crispy tofu. And one day last week I thought, let's do that and put it in tacos.
I made strips of crispy tofu and then made tacos with the regular accouterments; lettuce, cheese, salsa, plain yogurt. They were pretty good; maybe a little low on flavor. Tonight, I decided to make them a little fancier with one of Martha's recipes from this month's Martha Stewart Living magazine (an airport purchase). I made cabbage, scallion, and radish coleslaw with cilantro and lime juice.
I put the coleslaw in the taco along with tofu, monterray jack cheese, plain yogurt, hot sauce, and an extra squirt of lime juice. It would have been even more delicious with some avocado, but the one I had wasn't ripe yet. And it was amazing.
